SUNDAY'S WEATHER WAS BRUTAL BUT THE GOOSE DINNER SAVED THE DAY

...YESTERDAY'S GOOSE BREAST DINNER

Monday, 8:30 AM.  1 degree F, wind S, blustery.  The sky is partly cloudy with a lot of bright sunshine.  The humidity is 72% and the barometer is trending downward, now at 30.24".
   Yesterday's weather was a wintry mix of severe cold, high winds and blowing snow, creating near whiteout  conditions and slippery roads.  We went to church at St. Andrews in Ashland, our Bayfield Christ Church Episcopal being closed for the winter.  On the way two deer crossed the road just south of Bayfield on Hwy. 13.  They were very dark colored, probably having spent the winter thus far in the cedar swamps along Pike's Creek. They were not large, probably yearling deer, but they moved fast in the blowing snow and looked healthy.  We didn't see anything chasing them.
   Last fall's goose hunt with old friend Bill Peebles in Occonomowoc was fondly remembered yesterday when we had roast goose breast for dinner.  I'll pass on the recipe: take two goose breasts (about three pounds of meat) rub in salt and pepper and place in slow cooker.  Cover with vinegar and oil salad dressing.  Cook for about four hours, or until tender.  Remove from cooker and slice very thin.  Save cooking oil for gravy and serve with baked potato and fresh vegetables. There is no fat whatsoever in the meat so be sure it does not dry out.  Serve with a substantial red wine.
  Delicious, easy to make, and tastes like absolutely nothing else.
